Manual harvest in boxes of 20 kg, with selection on a choice table. Total destemming with gentle pressing where decanting occurs naturally for 48 hours. Fermentation in stainless steel at 16ºC with agitation of fine lees. Stage in stainless steel until August with bottling after gluing and light filtration.
Delicate wine with citrus notes and beginning of oil evolution characteristic of the variety. Quite mineral.
