The base wine was vinified with an open spout, with direct pressing of the grapes in a vacuum press and clarification of the must by static sedimentation. After care
extraction of the must, the fermentation of the base wine took place in stainless steel vats at controlled temperature. The sparkling wine was obtained by the classic method, with fermentation in a cellar at 14 ºC and aging on
lees of 28 months, for the first batch to be savored. After dégorgement, this sparkling wine aged for at least 2 months before commercialization.
It has a clear appearance, a straw yellow colour and an abundant and persistent foam cord.
The aroma is fine and intense, with notes of pineapple in syrup, confit orange peel, toasted bread, dried linden flowers and La Reine toothpick.
