Manual selection of grapes on a mat of choice at the entrance to the cellar. Total destemming, cold pre-fermentation maceration (2 days), fermentation in wooden vats for 5-6 days with temperature control (24-26ºC), adding 4 days of prolonged maceration (post-fermentation). Aged 16 months in French oak barrels of 300L capacity; 6 months bottled in the cellar.
Deep red-violet colour. Aroma complex with notes of fruits and spices - black pepper and cloves, graphite.
In the mouth it is large, intense, muscular, reveals an impressive density, concentrated, with a medium mouth, magnificent
balance between alcohol, structure and acidity. Sappy, firm texture, narrow mouth structure, which gives it strength and provides it with a
long maturation potential in bottle. A very long, precise finish with great aromatic and physical persistence. "
